This brown rice pilaf is a healthy and flavorful side dish. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add 1/4 cup chopped onion and cook until softened, about 3 minutes. Add 1 cup of brown rice and stir to coat in the oil. Add 2 cups of chicken or vegetable broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 45-50 minutes, or until the rice is tender and the liquid is absorbed. Stir in 1/4 cup chopped parsley and serve.
