Millet Idli is a healthy and gluten-free alternative to the traditional idli. It is made with a combination of millets like foxtail millet, barnyard millet, and urad dal. To make Millet Idli, soak millets and urad dal separately for a few hours. Grind them into a smooth batter and let it ferment overnight. The next morning, pour the batter into idli molds and steam them for about 10-12 minutes. Serve hot with coconut chutney or sambar.
