Eggplant Parmesan, or parmigiana di melanzane, is a classic Italian dish that is often served as a main course. With your Thermomix, you can easily make your own Neapolitan-style eggplant Parmesan at home. To make the dish, you will need 2 eggplants, 500g of canned tomatoes, 200g of mozzarella cheese, 100g of Parmesan cheese, 50g of olive oil, and salt and pepper to taste. Begin by slicing the eggplants and salting them to remove any bitterness. Then, add the canned tomatoes to the mixing bowl and blend for 10 seconds on speed 5. Next, add the olive oil and cook for 10 minutes at 100°C on speed 1. Once the tomato sauce is cooked, layer the eggplant slices, tomato sauce, mozzarella cheese, and Parmesan cheese in a baking dish.
