Seafood risotto is a classic Italian dish that is often served as a main course. With your Thermomix, you can easily make your own Neapolitan-style seafood risotto at home. To make the dish, you will need 300g of Arborio rice, 500g of mixed seafood (such as shrimp, mussels, and calamari), 1 onion, 1 garlic clove, 1 glass of white wine, 1 liter of fish stock, 50g of butter, 50g of Parmesan cheese, 50g of olive oil, and salt and pepper to taste. Begin by adding the onion and garlic to the mixing bowl and chopping for 5 seconds on speed 5. Then, add the olive oil and sauté for 5 minutes at 100°C on speed 1. Next, add the Arborio rice and white wine and cook for 2 minutes at 100°C on reverse speed 1. Finally, add the fish stock and cook for 18 minutes at 100°C on reverse speed 1. Once the risotto is cooked, add the mixed seafood, butter, Parmesan cheese, salt, and pepper and cook for an additional 5 minutes at 100°C on reverse speed 1. Serve your Neapolitan seafood risotto hot and enjoy!
