Start by cleaning the Botan Ebi (Spot Prawns). Remove the heads and shells, and devein them. Rinse them under cold water and pat dry with paper towels. 2. Cut the Botan Ebi (Spot Prawns) into small pieces and place them in a bowl. 3. Add the chopped red onion, jalapeno pepper, cherry tomatoes, and cilantro to the bowl with the Botan Ebi (Spot Prawns). 4. Squeeze the juice of 3 limes over the mixture and season with salt and pepper to taste. 5. Gently toss all the ingredients together until well combined. 6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. 7. Serve the Botan Ebi (Spot Prawn) ceviche chilled with tortilla chips or on top of a bed of lettuce. 8. Enjoy!
