Punjabi Aloo Paratha is a popular variation of Aloo Paratha, hailing from the state of Punjab in India. The parathas are generously stuffed with a spiced potato filling and cooked on a griddle with ghee or butter until golden and crispy. The dough is made with whole wheat flour and the filling is made with boiled and mashed potatoes, along with a blend of Punjabi spices like red chili powder, amchur (dried mango powder), and kasuri methi (dried fenugreek leaves). These parathas are traditionally served with a dollop of butter and a side of yogurt or pickle.
