Mallige idli, also known as jasmine idli, is a specialty from the state of Karnataka, India. These idlis are incredibly soft and spongy, resembling the texture of jasmine flowers, hence the name. Mallige idlis are made with a combination of rice, urad dal, and poha (flattened rice), which gives them their unique texture and taste. They are typically served with coconut chutney and a variety of vegetable sambar.
