Chettinad Masala Dosa is a popular South Indian dish made with fermented rice and lentil batter, filled with a spicy potato masala. The dosa batter is made by grinding soaked rice and urad dal together and allowing it to ferment overnight. The fermented batter is then spread thinly on a hot griddle and cooked until crispy. The potato masala is made with boiled and mashed potatoes cooked with onions, tomatoes, and a blend of spices. The masala is then spread on the dosa and folded. It is usually served with coconut chutney and sambar.
