Paneer Appam is a delightful variation of the traditional appam recipe. It is made with a fermented rice batter and a filling of spiced paneer (Indian cottage cheese). The batter is prepared by soaking rice and fenugreek seeds overnight, grinding it into a smooth paste, and fermenting it for a few hours. The fermented batter is then poured into a special appam pan, and a spoonful of spiced paneer filling is added to the center of each appam. The appams are cooked until the edges turn crispy and the paneer filling is cooked through. Serve these flavorful paneer appams with tomato chutney or any spicy side dish.
