Tamales are a traditional Mexican dish made from masa dough filled with various ingredients, such as meat, cheese, or vegetables, then wrapped in corn husks and steamed until cooked. Making tamales is a labor-intensive process, but the end result is worth it. To make the masa dough, mix together masa harina (corn flour), lard or shortening, broth, and seasonings until a soft dough forms. Soak the corn husks in warm water to soften them, then spread a thin layer of masa dough on each husk. Add your desired filling, fold the husk to enclose the filling, and tie the ends with strips of husk. Steam the tamales for about an hour until the dough is cooked and firm. Serve the tamales hot with salsa or your favorite toppings.
