Jambalaya is a classic Cajun dish that's packed with flavor. To make it, heat some oil in a large pot or Dutch oven and add diced onions, bell peppers, and celery. Cook until the vegetables are tender, then add diced chicken and sausage. Cook until the chicken is browned, then add 1 can of diced tomatoes, 1 3/4 cups of chicken broth, and 1 cup of rice.
