Sooji Dhokla, also known as Semolina Dhokla, is a popular variation of dhokla made with semolina (sooji) instead of chickpea flour. The batter is prepared by mixing semolina, yogurt, and a few spices like turmeric, ginger, and green chilies. It is then steamed until it becomes fluffy and cooked. Sooji Dhokla has a slightly grainy texture compared to the traditional dhokla but is equally delicious. It is often served with a tempering of mustard seeds, curry leaves, and grated coconut.
