Sushi rice is a short-grain rice that's sticky and slightly sweet, making it perfect for making sushi rolls. To make it, rinse 2 cups of sushi rice until the water runs clear. Add the rice to a pot with 2 1/4 cups of water and bring to a boil. Reduce the heat and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed. In a separate bowl, mix together 1/4 cup of rice vinegar, 2 tablespoons of sugar, and 1 teaspoon of salt. Heat the mixture in the microwave for 30 seconds, then stir until the sugar and salt have dissolved. Add the vinegar mixture to the cooked rice and stir until well combined. Allow the rice to cool before using it to make sushi rolls.
