Risotto is a creamy and comforting Italian rice dish that's perfect for a cozy night in. To make it, heat some butter or olive oil in a large pot or Dutch oven and add diced onions and garlic. Cook until the onions are translucent, then add 1 cup of arborio rice and cook for a few minutes until the rice is lightly toasted. Add 1/2 cup of white wine and cook until the liquid has been absorbed. Gradually add 4 cups of chicken or vegetable broth, 1/2 cup at a time, stirring constantly and allowing each addition to be absorbed before adding more.
