Once the pasta dough has been rolled out to the desired thickness, use a sharp knife or the cutting attachment on the pasta maker to cut it to the desired length. You can make long strands for spaghetti or shorter lengths for other types of pasta. Dust the cut pasta with flour to prevent it from sticking together.
